Ingredients

  • 2 cups cooked couscous
  • 2 cups diced cooked chicken
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large skillet, heat the olive oil over medium heat.
  2. 2. Add the cooked chicken and cook until heated through, about 5 minutes.
  3. 3. In a large mixing bowl, combine the couscous, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  4. 4. Add the cooked chicken to the bowl and mix well.
  5. 5. In a small bowl, whisk together the lemon juice, dried oregano, salt, and black pepper.
  6. 6. Pour the dressing over the couscous mixture and toss to combine.
  7. 7. Serve immediately or refrigerate for later.
