Instructions
1. Butterfly the shrimp by slicing them down the middle, but not all the way through.
2. Season the shrimp with salt and pepper.
3. Dredge the shrimp in flour, then dip in beaten eggs, and coat with breadcrumbs.
4. Heat the oil in a frying pan over medium-high heat.
5. Fry the shrimp until golden brown and crispy, about 2-3 minutes per side.
6. Drain on paper towels and serve hot.
