Ingredients 

Main Ingredients

  • 2 cups Egusi (ground melon seeds)
  • 1 cup Palm oil
  • 1 large Onion (chopped)
  • 2 cups Spinach (chopped)
  • 1 pound Assorted meats or fish cut into bite-sized pieces
  • 2 cups Stock or water
  • 2 tablespoon Ground crayfish
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Heat the palm oil in a large pot over medium heat.
  2. 2. Add the chopped onion and sauté until translucent.
  3. 3. Stir in the ground egusi and cook for a few minutes, stirring constantly.
  4. 4. Add the stock or water and bring to a boil.
  5. 5. Add the assorted meats or fish and cook until tender.
  6. 6. Stir in the ground crayfish, salt, and pepper to taste.
  7. 7. Add the chopped spinach and cook for another 5 minutes.
  8. 8. Serve hot with your choice of side.
