Ingredients

  • 2 tablespoon Butter
  • 1 cup Chopped onions
  • 2 cloves Garlic, minced
  • 1 lb Mushrooms, sliced
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
  2. 2. Add the mushrooms and cook until they release their juices and become tender.
  3. 3. Pour in the broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot.
  5. 5. Stir in the heavy cream and season with salt and pepper. Heat through but do not boil.
  6. 6. Serve hot and enjoy!
