Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 lb Chicken Breast, cubed
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 package Gnocchi
  • 1 cup Spinach, chopped
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until tender.
  3. Add chicken and cook until browned.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and add heavy cream. Stir well.
  6. Add gnocchi and cook until they float to the top.
  7. Stir in spinach and season with salt and pepper. Serve hot.
