  • 4 cups Corn kernels fresh or frozen
  • 1 cup Mayonnaise
  • 1 cup Cotija cheese crumbled
  • 1 teaspoon Chili powder
  • 2 tablespoon Lime juice freshly squeezed
  • 0.5 teaspoon Salt or to taste
  • 0.25 cup Cilantro chopped

Instructions 

  1. 1. Cook the corn kernels in a pot of boiling water for about 5 minutes, or until tender. Drain and set aside.
  2. 2. In a large bowl, mix the cooked corn, mayonnaise, Cotija cheese, chili powder, lime juice, and salt until well combined.
  3. 3. Divide the mixture into cups and garnish with chopped cilantro.
