Ingredients

  • 1 cup corn kernels fresh or canned
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup milk
  • 1 egg beaten
  • 2 tablespoon vegetable oil for frying

Instructions 

  1. In a mixing bowl, combine corn, flour, baking powder, salt, and pepper.
  2. Add milk and beaten egg to the dry ingredients. Mix until well combined.
  3. Heat oil in a frying pan over medium heat.
  4. Spoon batter into the pan, forming small fritters. Fry until golden brown on both sides, about 2-3 minutes per side.
  5. Remove fritters from the pan and drain on paper towels. Serve warm.
