Ingredients

  • 1 lb cooked shrimp peeled and deveined
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion thinly sliced
  • 0.5 cup cucumber diced
  • 0.25 cup fresh parsley chopped
  • 0.25 cup olive oil
  • 2 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine shrimp, cherry tomatoes, red onion, cucumber, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour dressing over the shrimp mixture and toss to coat.
  4. Chill in the fridge for at least 30 minutes before serving.
