  • 2 pieces Chicken Breasts boneless, skinless
  • 1 can Chipotle Peppers in Adobo Sauce chopped
  • 1 cup Corn cooked
  • 1 cup Black Beans rinsed and drained
  • 1 cup Cherry Tomatoes halved
  • 1 cup Red Onion diced
  • 1 cup Cilantro chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt, pepper, and a bit of olive oil.
  3. 3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. 4. Let the chicken rest for a few minutes, then slice it into strips.
  5. 5. In a large mixing bowl, combine the corn, black beans, cherry tomatoes, red onion, and cilantro.
  6. 6. Add the chopped chipotle peppers and adobo sauce to the bowl and mix well.
  7. 7. Add the grilled chicken strips to the bowl and toss everything together.
  8. 8. Drizzle with olive oil and season with additional salt and pepper if needed.
  9. 9. Serve immediately or chill in the refrigerator for later.
