Chinese Chicken Fried Rice Recipe

Main Ingredients
- 2 cups Cooked rice preferably day-old
- 1 cup Cooked chicken diced
- 2 tablespoon Soy sauce
- 1 cup Frozen peas and carrots
- 2 Eggs beaten
- 2 tablespoon Vegetable oil
- 2 cloves Garlic minced
- 1 Onion small, diced
- 2 stalks Green onions chopped
- to taste Salt and pepper
1. Heat 1 tablespoon of oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from wok and set aside.
2. Add the remaining oil to the wok. Sauté the garlic and onion until fragrant.
3. Add the diced chicken and cook until heated through.
4. Stir in the frozen peas and carrots, and cook for a few minutes until they are tender.
5. Add the cooked rice, soy sauce, and scrambled eggs. Mix well and cook for another 2-3 minutes.
6. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
