Ingredients 

Main Ingredients

  • 1 lb Chicken Breast diced
  • 1 cup Barley
  • 2 cups Carrots diced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 6 cups Chicken Broth
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. Heat a large pot over medium heat and add a bit of oil.
  2. 2. Add the diced chicken breast and cook until browned.
  3. 3. Add the diced carrots, celery, and onion. Cook until the vegetables are tender.
  4. 4. Add the minced garlic and cook for another minute.
  5. 5. Pour in the chicken broth and bring to a boil.
  6. 6. Add the barley, salt, pepper, and thyme. Reduce heat and let it simmer for about 45 minutes, or until the barley is cooked.
  7. 7. Serve hot and enjoy!
