Ingredients 

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 cups Carrots sliced
  • 1 cup Celery sliced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 8 cups Chicken Broth
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Thyme dried
  • 1 teaspoon Parsley chopped

Instructions 

  1. 1. In a large pot, add the chicken pieces and cover with water. Bring to a boil and then reduce to a simmer. Cook for about 30 minutes or until the chicken is cooked through.
  2. 2. Remove the chicken from the pot and set aside to cool. Once cooled, shred the chicken meat, discarding the bones and skin.
  3. 3. In the same pot, add the carrots, celery, onion, and garlic. Cook for about 5 minutes until the vegetables start to soften.
  4. 4. Add the chicken broth, shredded chicken, salt, pepper, thyme, and parsley. Bring to a boil, then reduce to a simmer. Cook for another 10-15 minutes.
  5. 5. Taste and adjust seasoning if needed. Serve hot.
