Ingredients

  • 4 pieces Chicken Breasts boneless, skinless
  • ½ cup All-purpose Flour
  • ¼ cup Olive Oil
  • ¼ cup Butter
  • 1 cup Chicken Broth
  • ¼ cup Lemon Juice freshly squeezed
  • 2 tablespoon Capers drained
  • ¼ cup Parsley chopped
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. Season the chicken with salt and pepper, then dredge in flour, shaking off any excess.
  3. Heat olive oil and butter in a skillet over medium-high heat. Cook the chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
  4. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a boil, scraping up any browned bits from the bottom of the pan.
  5. Return the chicken to the skillet and simmer for 5 minutes, or until the chicken is cooked through.
  6. Garnish with chopped parsley before serving.
