Chicken Scallopini Recipe

- 4 pieces Chicken Breasts boneless, skinless
- ½ cup All-purpose Flour
- ¼ cup Olive Oil
- ¼ cup Butter
- 1 cup Chicken Broth
- ¼ cup Lemon Juice freshly squeezed
- 2 tablespoon Capers drained
- ¼ cup Parsley chopped
- to taste Salt
- to taste Black Pepper freshly ground
Pound the chicken breasts to an even thickness using a meat mallet.
Season the chicken with salt and pepper, then dredge in flour, shaking off any excess.
Heat olive oil and butter in a skillet over medium-high heat. Cook the chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
In the same skillet, add chicken broth, lemon juice, and capers. Bring to a boil, scraping up any browned bits from the bottom of the pan.
Return the chicken to the skillet and simmer for 5 minutes, or until the chicken is cooked through.
Garnish with chopped parsley before serving.
