  • 1 can Black Beans, drained and rinsed
  • 1 can Corn, drained
  • 1 can Diced Tomatoes
  • 4 cups Chicken Broth
  • 1 packet Enchilada Sauce Mix
  • 1 cup Shredded Cheese for topping
  • 1 cup Sour Cream for topping
  • 1 bunch Cilantro chopped, for garnish

Instructions 

  1. 1. In a large pot, combine the chicken, black beans, corn, diced tomatoes, chicken broth, and enchilada sauce mix.
  2. 2. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  3. 3. Serve hot, topped with shredded cheese, sour cream, and chopped cilantro.
