Ingredients 

Main Ingredients

  • 500 g Chicken Breast cut into cubes
  • 1 large Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 400 ml Coconut Milk
  • 1 cup Chicken Broth
  • to taste Salt
  • to taste Black Pepper
  • 2 tablespoon Vegetable Oil
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add onions and cook until golden brown.
  3. Add garlic and ginger, cook for another minute.
  4. Add chicken and cook until browned.
  5. Stir in curry powder and turmeric.
  6. Pour in coconut milk and chicken broth. Bring to a simmer.
  7. Reduce heat and let it cook for 20 minutes.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped cilantro before serving.
