Chicken Arroz Caldo

Main Ingredients
- 1 cup rice uncooked
- 1 kg chicken cut into pieces
- 1 piece onion chopped
- 4 cloves garlic minced
- 1 piece ginger sliced
- 6 cups chicken broth
- 2 tablespoons fish sauce
- 1 teaspoon salt to taste
- 1 teaspoon pepper to taste
- 2 pieces green onions chopped
- 1 piece lemon sliced
1. In a large pot, heat oil over medium heat. Sauté the garlic, onion, and ginger until fragrant.
2. Add the chicken pieces and cook until they are lightly browned.
3. Pour in the fish sauce and cook for another 2 minutes.
4. Add the rice and stir to coat it with the oil and aromatics.
5. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer until the rice is fully cooked and the mixture has thickened, about 30-40 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with chopped green onions and lemon slices on the side.
