Cajun Corn and Crab Bisque

Main Ingredients
- 2 tablespoon Butter
- 1 cup Onion, chopped
- 1 cup Celery, chopped
- 1 cup Bell Pepper, chopped
- 2 cloves Garlic, minced
- 3 cups Corn kernels, fresh or frozen
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 teaspoon Cajun seasoning
- 1 lb Crab meat, picked over for shells
- to taste Salt and pepper
- 2 tablespoon Chopped fresh parsley for garnish
1. In a large pot, melt the butter over medium heat.
2. Add the onion, celery, and bell pepper. Cook until softened, about 5 minutes.
3. Stir in the garlic and cook for another minute.
4. Add the corn and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
5. Use a blender to puree the soup until smooth. Return to the pot.
6. Stir in the heavy cream, Cajun seasoning, and crab meat. Cook until heated through, about 5 minutes.
7. Season with salt and pepper to taste. Garnish with chopped parsley before serving.
