Ingredients

  • 1 lb chicken thighs, boneless and skinless cut into bite-sized pieces
  • 1 lb andouille sausage sliced
  • ½ cup vegetable oil
  • ½ cup all-purpose flour
  • 1 large onion diced
  • 1 green bell pepper diced
  • 2 stalks celery diced
  • 4 cloves garlic minced
  • 6 cups chicken broth
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup sliced okra optional
  • to taste salt and pepper

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Whisk in flour to make a roux, stirring constantly until it turns a dark brown color, about 15-20 minutes.
  2. 2. Add the onion, bell pepper, and celery to the roux. Cook until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  3. 3. Gradually whisk in the chicken broth until smooth. Add the chicken, sausage, Cajun seasoning, thyme, and bay leaves. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. 4. Add the okra (if using) and simmer for another 10 minutes. Season with salt and pepper to taste. Serve hot over rice.
