Ingredients

  • 4 cups Broccoli Florets
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Heavy Cream
  • 2 cups Chicken Broth
  • 1 cup Diced Onion
  • 2 cloves Garlic, minced
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose Flour
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Sprinkle the flour over the onions and garlic, stirring constantly for about 2 minutes to cook the flour.
  4. 4. Gradually whisk in the chicken broth and bring to a simmer.
  5. 5. Add the broccoli florets and cook until tender, about 10-15 minutes.
  6. 6. Use a blender to puree the soup until smooth, or leave it chunky if you prefer.
  7. 7. Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
  8. 8. Season with salt and pepper to taste. Serve hot.
