Ingredients

  • 1.5 cups All-purpose flour
  • 0.75 cup Sugar
  • 0.5 teaspoon Salt
  • 2 teaspoons Baking powder
  • 0.33 cup Vegetable oil
  • 1 large Egg
  • 0.33 cup Milk
  • 1 cup Fresh blueberries

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, salt, and baking powder.
  3. In another bowl, mix the vegetable oil, egg, and milk. Add to the dry ingredients and stir until just combined.
  4. Gently fold in the blueberries.
  5. Fill the muffin cups about ⅔ full. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
