Ingredients 

Main Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 4 cups Beef broth
  • 1 can Diced tomatoes 14.5 oz can
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried basil

Instructions 

  1. 1. In a large pot, brown the beef stew meat over medium heat.
  2. 2. Add the onions and garlic, and cook until softened.
  3. 3. Add the carrots, potatoes, and celery. Stir to combine.
  4. 4. Pour in the beef broth and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 45 minutes or until vegetables are tender.
  6. 6. Season with salt, pepper, thyme, and basil. Simmer for an additional 10 minutes.
  7. 7. Serve hot and enjoy!
