Beefy Mushroom Barley Soup

Main Ingredients
- 1 lb Beef stew meat cut into bite-sized pieces
- 1 cup Barley
- 8 oz Mushrooms sliced
- 1 large Onion chopped
- 2 cloves Garlic minced
- 8 cups Beef broth
- 2 tablespoon Olive oil
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 tablespoon Fresh parsley chopped, for garnish
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Add chopped onion and minced garlic, cook until softened.
4. Stir in sliced mushrooms and cook for another 5 minutes.
5. Add barley, beef broth, salt, and pepper. Bring to a boil.
6. Reduce heat to low, cover, and simmer for 45 minutes or until barley is tender.
7. Garnish with chopped fresh parsley before serving.
