Ingredients 

Main Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Celery sliced
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 6 cups Beef broth
  • 2 cups Potatoes diced
  • 1 can Diced tomatoes 14.5 oz can
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. In a large pot, brown the beef stew meat over medium heat.
  2. 2. Add the chopped onion and minced garlic, cook until softened.
  3. 3. Pour in the beef broth, diced tomatoes, and add the sliced carrots, celery, and diced potatoes.
  4. 4. Stir in the dried thyme, rosemary, salt, and black pepper.
  5. 5. Bring to a boil, then reduce heat and let it simmer for about 1.5 hours, or until the beef is tender and the vegetables are cooked through.
  6. 6. Adjust seasoning if needed and serve hot.
