Ingredients 

Main Ingredients

  • 1 lb Ground Beef
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 can Enchilada Sauce (10 oz)
  • 4 cups Beef Broth
  • 1 can Black Beans (15 oz, drained and rinsed)
  • 1 can Corn (15 oz, drained)
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. 2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the diced tomatoes, enchilada sauce, and beef broth. Bring to a boil.
  4. 4. Add the black beans, corn, ground cumin, chili powder, salt, and black pepper. Reduce heat and let simmer for 20 minutes.
  5. 5. Serve hot with your favorite toppings like shredded cheese, sour cream, and chopped cilantro.
