Ingredients

Main Ingredients

  • 2 lbs beef bones preferably with marrow
  • 1 large onion quartered
  • 2 large carrots cut into chunks
  • 2 stalks celery cut into chunks
  • 3 cloves garlic smashed
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 10 cups water

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for 30 minutes.
  2. 2. Transfer the roasted bones to a large stockpot. Add the onion, carrots, celery, garlic, apple cider vinegar, salt, and pepper.
  3. 3. Pour in the water, ensuring the bones and vegetables are fully submerged. Bring to a boil, then reduce to a simmer.
  4. 4. Simmer for at least 8 hours, skimming off any foam or impurities that rise to the surface.
  5. 5. Strain the broth through a fine-mesh strainer into a large bowl. Discard the solids.
  6. 6. Let the broth cool, then refrigerate. Once chilled, remove the solidified fat from the top.
