Main Ingredients
- 2 lbs beef bones preferably with marrow
- 1 large onion quartered
- 2 large carrots cut into chunks
- 2 stalks celery cut into chunks
- 3 cloves garlic smashed
- 2 tablespoon apple cider vinegar
- 1 teaspoon salt to taste
- 1 teaspoon pepper to taste
- 10 cups water
1. Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for 30 minutes.
2. Transfer the roasted bones to a large stockpot. Add the onion, carrots, celery, garlic, apple cider vinegar, salt, and pepper.
3. Pour in the water, ensuring the bones and vegetables are fully submerged. Bring to a boil, then reduce to a simmer.
4. Simmer for at least 8 hours, skimming off any foam or impurities that rise to the surface.
5. Strain the broth through a fine-mesh strainer into a large bowl. Discard the solids.
6. Let the broth cool, then refrigerate. Once chilled, remove the solidified fat from the top.
