- 3 lbs Beef chuck roast cut into chunks
- 4 cups Beef broth
- 5 Dried guajillo chiles stems and seeds removed
- 3 Dried ancho chiles stems and seeds removed
- 1 White onion quartered
- 6 cloves Garlic peeled
- 2 teaspoon Dried oregano
- 1 teaspoon Ground cumin
- 2 teaspoon Salt
- 1 teaspoon Black pepper
- 2 tablespoon Apple cider vinegar
1. Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.
2. Place the toasted chiles in a bowl and cover with hot water. Let them soak for 20 minutes.
3. In a blender, combine the soaked chiles, onion, garlic, oregano, cumin, salt, pepper, and apple cider vinegar. Blend until smooth.
4. In a large pot, add the beef chunks and pour the chile sauce over the meat. Add the beef broth and bring to a boil.
5. Reduce the heat to low, cover, and simmer for about 3 hours, or until the meat is tender and shreds easily.
6. Serve the birria with warm tortillas, chopped onions, cilantro, and lime wedges.
