Ingredients 

Main Ingredients

  • 1 lb beef stew meat cut into bite-sized pieces
  • 1 cup lentils rinsed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 teaspoon thyme dried
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the beef and cook until browned on all sides. Remove and set aside.
  2. 2. In the same pot, add the onion and garlic. Cook until softened.
  3. 3. Return the beef to the pot. Add the lentils, beef broth, carrots, celery, thyme, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat to low, cover, and simmer for about 45 minutes, or until the lentils and beef are tender.
  5. 5. Adjust seasoning with salt and pepper if needed. Serve hot.
