Beef and Guinness Stew

Main Ingredients
- 2 tablespoon olive oil
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can Guinness beer
- 2 tablespoon tomato paste
- 2 carrots peeled and sliced
- 2 stalks celery, chopped
- 2 large potatoes, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
Heat the olive oil in a large pot over medium-high heat.
Add the beef and brown on all sides. Remove and set aside.
Add the onion and garlic to the pot and cook until softened.
Return the beef to the pot and add the beef broth, Guinness, and tomato paste. Stir well.
Add the carrots, celery, potatoes, thyme, and rosemary. Season with salt and pepper.
Bring to a boil, then reduce heat and simmer for 2 hours, or until the beef is tender.
Serve hot and enjoy!
