Beef and Barley Soup Recipe

Main Ingredients
- 1 lb Beef stew meat cut into bite-sized pieces
- 1 cup Pearl barley
- 1 Onion chopped
- 3 Carrots chopped
- 2 stalks Celery chopped
- 4 cups Beef broth
- 2 cups Water
- 2 cloves Garlic minced
- 1 teaspoon Dried thyme
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper or to taste
- 2 tablespoon Olive oil
Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
Add onion, carrots, and celery. Cook until vegetables are softened.
Stir in garlic and cook for another minute.
Add beef broth, water, barley, thyme, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 1 hour or until barley is tender.
Adjust seasoning with salt and pepper if needed. Serve hot.
