Basque Codfish Stew Recipe
A hearty and flavorful Basque-style codfish stew.

Main Ingredients
- 500 g Codfish fillets cut into chunks
- 2 Onions chopped
- 3 Garlic cloves minced
- 1 Red bell pepper chopped
- 1 Green bell pepper chopped
- 400 g Tomatoes diced
- 2 tablespoon Olive oil
- 1 teaspoon Paprika
- 1 cup Fish stock
- to taste Salt
- to taste Black pepper
- 1 Bay leaf
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and cook until translucent.
3. Stir in minced garlic, red and green bell peppers, and cook for another 5 minutes.
4. Add diced tomatoes, paprika, and bay leaf. Cook for 10 minutes, stirring occasionally.
5. Pour in the fish stock and bring to a simmer.
6. Add the codfish chunks, season with salt and black pepper to taste, and cook for 15 minutes or until the fish is cooked through.
7. Remove the bay leaf and serve hot.
