Ingredients 

Main Ingredients

  • 2 lbs beef bones preferably with some meat on them
  • 1 large onion quartered
  • 2 stalks celery chopped
  • 2 large carrots chopped
  • 2 cloves garlic smashed
  • 10 cups water

Instructions 

  1. 1. Preheat oven to 450°F (230°C). Place beef bones on a roasting pan and roast for 30 minutes.
  2. 2. Transfer roasted bones to a large pot. Add onion, celery, carrots, garlic, bay leaves, and water.
  3. 3. Bring to a boil, then reduce heat to low and simmer for 4 hours. Skim off any foam that rises to the top.
  4. 4. Strain the stock through a fine-mesh strainer. Discard solids. Let cool, then refrigerate or freeze.
