Ingredients 

Main Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 1 cup Barbecue Sauce
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • 1 cup Corn Kernels cooked
  • 1 cup Black Beans rinsed and drained
  • 1 cup Shredded Cheddar Cheese
  • 1 piece Avocado sliced
  • ½ cup Ranch Dressing

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side, or until fully cooked.
  3. 3. Brush the chicken with barbecue sauce during the last few minutes of cooking. Remove from grill and let rest for 5 minutes.
  4. 4. Slice the chicken into strips.
  5. 5. In a large mixing bowl, combine mixed greens, cherry tomatoes, corn, black beans, shredded cheddar cheese, and avocado slices.
  6. 6. Top the salad with the grilled chicken strips.
  7. 7. Drizzle ranch dressing over the salad and serve immediately.
