Ingredients

  • 1 lb Shrimp peeled and deveined
  • 1 cup Shredded coconut unsweetened
  • ½ cup Panko breadcrumbs
  • 2 Eggs beaten
  • ½ cup Flour
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded coconut and panko breadcrumbs.
  3. In another bowl, beat the eggs.
  4. In a third bowl, combine flour, salt, and pepper.
  5. Dip each shrimp in the flour mixture, then the beaten eggs, and finally coat with the coconut-panko mixture.
  6. Place the coated shrimp on the prepared baking sheet.
  7. Bake for 12-15 minutes, or until the shrimp are cooked through and the coating is golden brown.
