Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 Avocados, diced
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, finely chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat a skillet over medium heat and cook the shrimp for about 2-3 minutes on each side until pink and opaque.
  2. 2. In a large mixing bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, and red onion.
  3. 3. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss gently to combine.
  4. 4. Serve immediately or chill in the refrigerator for 15 minutes before serving.
