Ingredients

  • 4 Poblano Peppers roasted and peeled
  • 1 cup Cheese shredded (Monterey Jack or Queso Fresco)
  • 3 Eggs separated
  • 1 cup Flour
  • 1 cup Oil for frying

Instructions 

  1. Roast the poblano peppers over an open flame or under a broiler until the skin is charred. Place them in a plastic bag to steam for 10 minutes, then peel off the skin.
  2. Make a small slit in each pepper and remove the seeds. Stuff each pepper with shredded cheese.
  3. Separate the eggs. Beat the egg whites until stiff peaks form, then gently fold in the yolks.
  4. Heat the oil in a skillet over medium heat. Roll each stuffed pepper in flour, then dip in the egg batter.
  5. Fry the peppers in the hot oil until golden brown on all sides. Drain on paper towels and serve hot.
