  • 2 pounds Yukon Gold potatoes peeled and sliced
  • 6 slices Bacon chopped
  • 1 cup Onion finely chopped
  • ¼ cup Apple cider vinegar
  • ¼ cup Water
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoons Fresh parsley chopped

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and set aside.
  2. 2. In a skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  3. 3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. 4. Stir in the vinegar, water, sugar, mustard, salt, and pepper. Bring to a boil, then remove from heat.
  5. 5. Combine the cooked potatoes, bacon, and dressing in a large mixing bowl. Toss gently to coat.
  6. 6. Garnish with chopped parsley and serve warm.
