Main Ingredients
- 1 whole Chicken cut into pieces
- 2 cups Basmati Rice rinsed and soaked
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 tablespoon Tomato Paste
- 2 large Tomatoes chopped
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Ground Turmeric
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Cardamom
- 1 teaspoon Ground Black Lime
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 3 cups Chicken Broth
- ¼ cup Raisins
- ¼ cup Slivered Almonds toasted
1. Heat oil in a large pot over medium heat. Add the onions and cook until golden brown.
2. Add the garlic and cook for another minute.
3. Add the chicken pieces and cook until they are browned on all sides.
4. Stir in the tomato paste, chopped tomatoes, and all the spices. Cook for a few minutes until fragrant.
5. Add the rice, chicken broth, raisins, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes until the rice is cooked and the chicken is tender.
6. Garnish with toasted almonds before serving.
