- 2 medium zucchinis sliced thin
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 large eggs beaten
- to taste Salt and pepper
1. Preheat your air fryer to 400°F (200°C).
2. Slice the zucchinis thinly.
3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
4. Dip zucchini slices in beaten eggs, then coat with breadcrumb mixture.
5. Place the coated zucchini slices in the air fryer basket in a single layer.
6. Air fry for 10-15 minutes, flipping halfway, until golden and crispy.
7. Season with salt and pepper to taste. Serve immediately.
